These Sticky Sesame Tofu and Corn Pita Pockets are perfect for back-to-school and packed lunches for work. Homemade sticky, tangy and slightly sweet sesame tofu stuffed inside a pitas with crisp lettuce and a creamy cheesy corn & basil slaw. Delicious, loaded up and so, so fun. It’s the perfect weekday lunch or dinner, but even better as a packed lunch because you’ll actually look forward to it all day! No soggy salad or sad sandwiches allowed. Serve with sweet potato fries for the perfect weeknight dinner. And don’t forget your favourite sauce for dipping!

As August rolls on and we get closer to September I can’t help but get excited about back to school season. Am I going back to school? No. Do I work from home and have for the last 6 years? Yes. Do I still get excited about packed lunch ideas and actually interesting and delicious ways to eat plant-based goodness on the go? You bet I do!!!
And I gotta say I am so excited for this recipe! It is such an unexpected flavour combo that works so well and just tastes like late summer/early fall to me. It’s hearty, comforting yet still fresh. I can’t get enough! I know it will quickly become a go-to for so many of you who are looking for fun and exciting packed lunch ideas and quick weeknight meals.
The details…
The tofu is quickly tossed with some flour or cornstarch and pan-fried until crisp. Then, add the sauce which is a super easy blend of soy sauce, ketchup (trust me), sesame oil, maple syrup and garlic. It coats the tofu and gives it that delicious flavourful sticky exterior.
While its cooling slightly, I like to make the corn slaw. In a mixing bowl just combine the corn (fresh or frozen, defrosted), basil, vegan mayo and cheese. That’s it! Slice your pitas in half and stuff with shredded crisp lettuce, corn slaw and tofu chunks.

Description
Homemade sticky, tangy and slightly sweet sesame tofu stuffed inside a pitas with crisp lettuce and a creamy cheesy corn & basil slaw.
Ingredients
Tofu:
- 1 block firm tofu, pressed and ripped into bite-size pieces
- 2 tbsp flour or corn starch
- oil for pan frying
Sticky Sesame Sauce:
- 3 tbsp soy sauce
- 2 tbsp maple syrup
- 2 tbsp ketchup
- 1 tbsp sriracha (or less if you like it less spicy)
- 2 tsp sesame oil
- 1–2 cloves of garlic, minced
Corn Slaw:
- 1 cup corn
- 3 tbsp vegan mayo
- 2 tbsp freshly chopped basil
- 1/2 cup vegan cheese
Pita Pockets:
- 2 pitas, cut in half to make 4 pockets
- 2 cups shredded lettuce
Instructions
- Toss tofu with cornstarch or flour until coated.
- Heat a frying pan on medium-high and add a few tbsp of oil. Add the tofu when hot, panfry about 5-6 minutes until starting to crisp up.
- Stir together sauce ingredients.
- Turn heat back to medium and add the sauce. Cook until sauce has thickened and starting to get sticky around the tofu, about 3-4 minutes.
- Stir together corn slaw ingredients.
- Assemble the pita pockets by stuffing with some lettuce, corn slaw and tofu. Enjoy!

- Cook Time: 20 minutes

My husband and I made these for dinner tonight and loved them! While it’s a quick recipe, we really loved the sticky sesame sauce and the corn slaw! We will be making this again and again!

This recipe is so simple to make and sooooo delicious. Even my meat loving husband likes this. I make tofu often but this is one of my favorites. I have made this at least 10 times and it is perfect every time. Thanks Liv!
