I just love noodles! These amazing stir fry noodles are made in less than 15 minutes and legit taste so much better than take out.

Stir fry noodles are a family favorite – my 9 year old says it’s his favorite meal!! Full of veggies and delicious slurpable noodles, you’ll want to make these every week. Add some chicken for chicken stir fry with noodles or clean out the fridge and fill it with extra veggies. If you love this, definitely try our honey garlic chicken with roasted broccoli next!

Stir Fry Noodle Ingredients

  • Soba noodles – Also called buckwheat noodles. Soba noodles made from buckwheat are typically gluten free, but make sure to check your packaging if that’s your goal. Other great options are rice noodles or lo mein noodles.
  • Coconut oil – Coconut oil complements the flavors of this recipe well, but you can also use any kind of vegetable oil you have on hand.
  • Garlic cloves – Fresh garlic will give you the most potent flavor, but I also like to keep a jar of minced garlic in the fridge for days I’m in a rush or if I run out of fresh.
  • Ginger – Like with garlic, fresh will be most potent but you can use squeeze ginger or powdered as well.
  • Garnishes – Chopped green onion or chives and sesame seeds for topping.
  • Sauce – Soy sauce, olive oil, lemon juice, sesame oil, maple syrup (or honey), sriracha, grated ginger. Or you can use our easy stir fry sauce recipe!

Suggested Veggies

  • Shallot – If you can’t find shallots (sometimes my market doesn’t have them), try red onions.
  • Sliced mushrooms – White mushrooms are what I usually use, but portabella is delicious as well.
  • Broccoli florets – Broccoli adds a great crunch and vibrant color to this dish.
  • Carrot – Julienned or shredded. You can make it easy by buying a bag of matchstick carrots from the produce section.
  • Kale – De-ribbed and chopped, or buy a ready to eat bag.

How do you make stir fry noodles?

First, cook noodles according to package directions. While noodles are cooking, whisk together ingredients for the sauce in a small bowl, and set aside.

Next, heat oil in skillet or wok, and add garlic, ginger, mushrooms. Remove mushrooms from skillet and set aside.

Then, saute shallots until tender. Add broccoli, carrots and kale. Return mushrooms to skillet and cook until veggies are tender.

Finally, add the cooked noodles and the sauce to the skillet. Stir to coat.

Do you boil noodles before stir fry?

Yes, you should boil the noodles first before adding them to the stir fry. This will allow the sauce to coat the outside rather than being absorbed into the noodles.

Prepare the noodles according to the package directions and then set them aside until it is time to mix everything together.

How do you make stir fry noodles without sticking?

If your stir fry noodles are sticking, toss them with a small amount of cooking oil immediately after draining the water and before setting them aside. You can use whatever type of oil you are cooking with, or even a pat of butter.

The noodles stick together because they are coated with a sticky layer of starch. The oil will keep them from adhering to one another, but do not add too much because you still want the sauce to stick!

What are the best noodles for stir fry?

Our favorite stir fry noodles are soba noodles (sometimes called buckwheat noodles). Other options are ramen noodles, rice noodles, lo mein noodles, or even zucchini noodles!

What goes with stir fry?

Stir fry goes great with some crispy chicken thighs, teriyaki chicken, or soy ginger salmon. For dessert try our caramel cheesecake, or cake mix lemon cookies!

Ingredients

Stir Fry Noodles

  • Soba/buckwheat noodles about 5 oz., or ½ package
  • 4 tablespoons coconut oil divided
  • 3 garlic cloves minced
  • 1 teaspoon fresh ginger grated (can substitute ½ tea ginger powder)
  • 1 quart sliced mushrooms
  • 1 shallot chopped (or ¼ cup diced red onion)
  • 1 ½ cups broccoli florets
  • 1 carrot julienned or shredded
  • 3 - 4 stalks kale de-ribbed and chopped
  • Chopped green onion (or scallioand sesame seeds for topping

Sauce

  • ¼ cup soy sauce
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 teaspoons sesame oil
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon sriracha or more if desired
  • 1 teaspoon grated ginger

Instructions

  • Cook noodles according to package directions. While noodles are cooking, whisk together ingredients for the sauce in a small bowl, and set aside.

  • Melt 2 tablespoonful coconut oil in skillet or wok over med-high heat. Add garlic and ginger. Cook for 1 minute.

  • Add in mushrooms and cook for about 5 minutes. Remove mushrooms from skillet.

  • Melt remaining 2 tablespoons coconut oil in skillet. Add shallots and cook about 3 minutes. Add broccoli, carrots and kale. Cook about 5 minutes.

  • Add mushrooms back to skillet and cook another 3 to 5 minutes, until veggies are tender.

  • Add the cooked noodles and sauce to the skillet. Stir to coat. Cook about 2 minutes.

  • Serve topped with sesame seeds and green onio
